The Elk Tri Tip is very much like a steak. Strong in flavor, but quick to cook and tender.

A small Elk Tri Tip starts at 16 ounces (a pound), and larger cuts are up to 24 ounces. Depending on your appetites, that’s dinner for five or just two.

Why are these Tri Tips so rare?

First, the supply of Rocky Mountain Elk is dwindling. It’s more difficult to farm raise elk every day.

The cut is also a factor. There are only two tri tips per elk, cut from the shoulder region like a sirloin. On an elk, this muscle is narrower.

That’s why Elk Tri Tip is in short supply. I’d be very surprised if you see it at your local butcher or specialty grocer.

Yet this cut is an obvious alternative to sirloin because, like sirloin, the tri tip muscle packs a ton of umami roast flavor.

You can broil or grill it in just 15 minutes and serve it sliced in beautiful medallions.
